80 grams Floria Danica buttermilk mother culture defrosted
72 degrees
1/4 tsp ea: calcium and animal rennet

Heat milk to 72
Add calcium dissolved in 1/4 c cool water
Stir for 1 min
Add mother culture
Stir for 1 min
Rest for 2 min
Add rennet dissolved 1/4 c cool water
Stir for 1 min
Put lid on pot, cover with towel
